Although making them is simple, there are a lot of things you will have to know, before you just go with it. First and foremost, people usually don’t have enough time to make fresh juices every single day, so freezing or storing them is needed. Due to the fact you cannot just leave juice on a shelf, you must know how to save it properly for later. Yes, freezing it is possible, but once again, you should know some basics.
Nutrients in a juice won’t stay there forever
Once the juice is made, you usually have between 5 and 15 minutes to drink it. Why? All the nutrients, vitamins, minerals, enzymes and other ingredients that are needed for the body will be ‘’free’’ in that juice. But, juicing damages their cell membranes, so they cannot survive light, heat nor air. Most of them cannot withstand more than 10 minutes, meaning that the healthy properties of a homemade juice will drop in a matter of minutes.
The best thing you can do is to drink a juice as soon as you made it. It is also recommended to make fresh juice each time you want it, instead of making 2 gallons of it which will last a few days! Important: Once juice changes the color and furthermore changes the taste, it means that the oxidation has begun. You shouldn’t drink it.
Freezing the juice: How and why
If you have just made a large amount of juice and you want to store it for some time, you can put it in a freezer. This actually works and due to unique properties of the juices, they will still be delicious once you un-freeze them. But, if you are planning to drink that juice on the following day, place it in a refrigerator, rather than in a freezer.
Freezing Homemade Fruit Juice is only recommended if you are planning to drink it after a few days. The best way to do so is to use a proper container. Only those that have been designed for this purpose should be considered! Now, when you pour juice in that container, make sure there is no air left, because it damages the nutrients the most! To do this simply overfill the container. Never leave it half empty or almost completely empty.
An even better alternative is to use vacuum sealing container. Basically, it is a container which comes with a small vacuuming device, used to remove the air from it. Maybe it is simple, but this actually prolongs the storing time.
Additionally, you may want to add a bit of lemon to a juice. The acid from it will help the juice stay in perfect state for a longer period of time. You may also want to consider to freeze the juice in ice cube tray. On the other side, smaller amounts should be frozen in plastic bottles. Once you defrost it, drink from the bottle, all of it.

How long homemade fruit juice can be stored
Extremely important thing to know is for how long homemade juice can be stored. Most of you believe that it can be stored as long as the color looks the same and there is no bad odor. However, the time juice can be stored depends on the method you used to make it! As such, we have:
- Juices made with centrifugal juicers: They damage the nutrient, membranes, therefore this kind of juice can last up to 8 hours.
- Juices made with slow RPM juicers: These juicers damage the nutrient membranes far less, so they can last longer. In reality, these juices can last up to 72 hours, which most of the juicer manufacturers claim.
When it comes to freezing juice, the situation is completely different. It can be stored for 7 days without loss of the nutrients nor taste. That’s why most people decide for this alternative.
Of course, when freezing juice there are a few things to consider as well. The most important one is the containers. Which should be used and why?
Best containers for the job
The best container for storing juice is made from glass. You may choose plastic ones, due to lower prices, but even HDPE plastics will ‘’infect’’ juice. Recently we were able to use NALGENE plastic bottles which were apparently safe, but according to the latest data, they aren’t!
All of this means that glass containers are the best. You should use jars with a wide opening, because cleaning the juice from containers may be a difficult task, so you don’t want jars with the narrow opening!
Choosing the correct size is important as well. We recommend jars with 16 or 30 ounce capacity. They offer the most suitable capacity and they are small enough to place in a freezer. Additionally, you may consider 8 ounce jars. They are suitable because each one contains juice sufficient for one serving. At the same time, this may be another factor to consider when storing your juice. Most of you should freeze the amount of juice needed for just one serving. There is no point in storing a huge amount of it when you can make a fresh one with your juicer.
The bottom line here is that a glass container, which comes with a vacuum feature, used to remove the air from it is the best alternative for freeing juice.
